Recipe: Baked cod with potatoes

Here is a simple recipe to prepare baked cod with potatoes:

Baked Cod with Potatoes

Ingredients:

  • 4 loins of desalted cod
  • 4 medium potatoes
  • 2 onions
  • 4 cloves of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley
  • 1 lemon (optional)

Instructions:

  1. Preheat the oven to 200°C (390°F).
  2. Cut the potatoes into thin slices and the onions into julienne strips. Finely chop the garlic cloves.
  3. On a baking sheet, place a layer of potato slices and a layer of onion on top. Sprinkle the chopped garlic on top and add a splash of olive oil. Repeat this process until you use up all the potatoes and onions.
  4. Place the cod loins on the bed of potatoes and onions. Season with salt and pepper to taste and add a drizzle of olive oil on top of each loin.
  5. Bake for about 20-25 minutes, or until the potatoes are tender and the cod is cooked through.
  6. Once ready, remove from the oven and sprinkle with fresh chopped parsley. If desired, squeeze a little lemon over the cod before serving.
